You can start harvesting the lettuce when the leaves reach full maturity.
The leaves will grow back 3 to 4 times.
The lettuce head can be cut off at the base whole for a salad or you can remove single leaves for a sandwich.
Make sure to harvest the leaves before it starts developing flowers or it will grow bitter in taste.
