This cucumber salad is the perfect side dish for BBQ season! The marinade is made with your Vegehome grown dill and has a light taste that complements the cucumbers beautifully. It’s easy to make and is tangy, creamy, and so fresh.

Cucumber Salad is lovingly called Gurkensalat in German and is traditionally prepared with sour cream, vinegar, and fresh dill. Like most German salads, this one tastes best after chilling for a few hours. You can even make it up to one day in advance! 

This cucumber salad is not only full of flavour but also nutrients. Cucumbers are low in calories yet high in fibre, vitamin K, potassium and water content. Dill is rich in antioxidants and a good source of vitamin C, magnesium, and vitamin A. 

INGREDIENTS

  • 1-2 large English cucumbers (chopped)
  • 1 clove garlic (finely minced)
  • 1 tablespoon fresh dill plus more for garnish(minced)
  • 2 tablespoons red onion (sliced)
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon sour cream (or greek yogurt)
  • Salt and freshly ground black pepper, to taste

DIRECTIONS

  1. Arrange the sliced cucumber and red onion in a large, shallow dish.
  2. Combine olive oil, apple cider vinegar, sour cream (or greek yogurt), garlic, dill, salt and pepper in a mason jar and shake.
  3. Pour marinade over the cucumber and red onion and marinate for at least 3 hours in the refrigerator.
  4. Garnish with additional chopped dill and serve.
