INGREDIENTS

  • 3/4 pound firm tofu, drained
  • 2 tablespoons sesame seeds
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 head of BOK CHOY (about 3/4 pound), sliced crosswise
  • 4 cups bean sprouts (9 oz)
  • 1 teaspoon crushed or grated chicken bouillon cube
  • Salt and freshly ground pepper

DIRECTIONS

  1. Wrap tofu in paper towels and drain for 30 minutes.
  2. Toast sesame seeds in a skillet over moderate heat until fragrant, then grind to a coarse powder.
  3. Heat sesame oil in a large skillet.
  4. Add tofu, breaking it into chunks, and stir-fry until lightly browned about 3 minutes.
  5. Transfer tofu to a plate.
  6. Add BOK CHOY and stir-fry until tender, about 5 minutes.
  7. Add bean sprouts and stir-fry until heated through.
  8. Stir in tofu and season with a bouillon cube, salt, and pepper.
  9. Garnish with sesame seeds.
